What is Garri?
Garri is a food commonly consumed in West Africa, it is a creamy granular flour obtained by processing freshly harvested cassava, so Garri is a flour which goes through an additional frying process.
In the northern part of Nigeria, where the common language Hausa is spoken, in this language Garri means all the powdery granules obtained from processing other crops such as rice, maize, guinea corn, millet, plantain and yam. the Garri obtained by processing maize and wheat is called Garin Alkama and that obtained by processing guinea corn is called Garin Masara. There is also a powdery medicine called Garin Magani.
Flour foods like Garri, Elubo, Amala Ogede and so on form the major part of the diet consumed by Nigerians, Benin Republic, Guinea, Ghana, Togo, Cameron and Liberia
Processing Garri
For us to get Garri we need cassava, when we have our freshly harvested cassava, we peel off the cassava's back, grate it and crush it into a mash which is then placed in filter bags and then pressed to squeeze water out of the mash for 2 to 3 hours after which the mash is then dried, sieved and fried with palm oil or without palm oil, when fried with palm oil it gives a yellow colour, this type of Garri is called a Yellow Garri, while that which was fried without palm oil remains white in colour and it is called a White Garri.
